I don't think you need to ask the interview "how are you doing" as well – it would sound strange.

Yes, say "good luck in the future" to a student.

Hi Clare,
If my interviewer says 'how are you doing? I say I'm good thank you. should I say 'How are you doing'?
Can I say my student if I know they are not going to be my student anymore 'Good luck in the future.

Yes, you can say that. Or "Is there anythiing else you want me to do" / "Is there anything else you want to talk about?" and let him say you can go.
